Esther originally wanted to be a criminologist, but her mother convinced her to try modelling. The idea was good, her career has started and in 1996 she  has moved to New York where within two day she was booked by twenty designers.

Since she has appeared in campaigns for: Atelier Versace, Saks Fifth Avenue, and Victoria's Secret but her most remarkable appearance was in DKNY ads. She has graced the cover of ELLE Spain, Mademoiselle, Marie Claire Italy, Mondo Uomo, as well as Vogue Spain -- all in 1997.

Eshter has walked down the catwalk at many designer fashion shows like Calvin Klein, D&G, DKNY, Oscar de la Renta, Giorgio Armani, Valentino, Versace, and Givenchy among others, and also made her film debut with an appearance in The Thomas Crown Affair (1999), playing with Pierce Brosnan.

Her career slowed significantly for years while she took time to recover from an immunological condition, vasculitis.

Her catlike eyes and her lips — enhanced with silicone — became her trademarks. 

She doesn’t see herself as a femme fatale, but rather as a mature woman with a good sense of humor. In an interview, when asked how she wins men over, she replied:

“I make a really delicious lobster rice — and my baked fish is very good too.”

Esther was married two times, with both marriages lasting one year. Her first husband was a Dutch model, Mark Vanderloo who appeared alongside her in the 1997 DKNY advertising campaigns. In 2014, Galia was born, the daughter whom Esther is raising without a partner. She has never revealed the identity of the child's father.
